
The promoters of the Vitis Natura project, a couple formed by Conchi and Antonio, are the heirs of an enological tradition that dates backmore than 60 years. As they had always been aware of the need to protect the environment and lead a healthy life, they decided to undertake this journey with their goals set on their wines being certified as ecological. Thus, the grapes they cultivate in a four-hectare vineyard suffer no pesticide, insecticide or herbicide treatment whatsoever, as the fields are only fertilized with manure. This is a philosophy that they have also followed to a maximum in the construction of the winery itself, in which wood, iron and stone predominate over all other materials.
The estate is located in the South of the province of Cuenca, at an approximate altitude of 800meters, framed within a land of vineyards par excellence, combined with small groves of Pines and autochthonous Helm Oaks that are characteristic to the area. This landscape, so relaxing to the senses, is situated at a distance of 2.5 kilometers from the closest urban population, thus the proprietors obtain their electric power with solar panels and a small windmill.
They combine their organic conviction with specific vine-growing practices to obtain quality wines, with said practices represented by low yield production, Vendimia en verde (Green Harvest), method that leaves only the best clusters of grapes of each variety on the plant to thus obtain increased quality and manual harvesting or unloading of 15-kilogram boxes. With all these practices aimed at selecting the very best grapes. “We want our wine to be a unique one, differentiated, while maintaining its own personality due to the blending of varieties. We carry out the coupage in the fields themselves, using amounts and varieties in accordance to their qualities and characteristics, cultivated in the proportion that we consider opportune, thus contributing exactly what we want to the wine”, they comment. In this fashion the wine they obtain is a combination of six varieties: Cabernet Sauvignon, Cabernet Franc, Syrah, Merlot, Petit Verdot and the autochthonous Bobal, hence guaranteeing that the consumer obtains a wine that is not only healthy, but also very pleasing.
