Wine Cellars "Finca Los Nevados", an innovative project in the heart of La Mancha
VINTAGE
The average sprout of Chardonnay takes place by the 29th of March and by the 14th of April for the Sauvignon Blanc. The Chardonnay flower buds arise in the beginning of June and mid June for the Sauvignon Blanc. The rainy Spring allows a sprouting and first steps of growing to be homogeneous. During the ripening months (July, August), temperatures were smoother than usual, specially in August, with and average temperature of 23,7ºC (historically measured as of 25,45ºC). Thanks to this fact, the ripening is slow and the grapes are picked up with a good acidity.
HARVEST
Chardonnay is harvested on the 28th of August and Sauvignon Blanc on the 4th of September; both in excellent sanitary conditions. In order to avoid oxidations and to reduce temperature in the harvest container we add dry ice. Then, cold maceration takes place for 4 hours and before fermentation it is racked. Alcoholic fermentation starts under controlled temperature in stainless steel vats.
BOTTLING
This wine is bottled in April 2008 after stabilizing and filtering. Its optimum time for consumption will be throughout 2008 and 2009.
TASTING
It is clean, bright and yellow straw coloured. High intensity aromas of lychees, stone fruit and white Jasmine flowers on the nose. On the palate, it is wide, fresh, balanced, oily and with a good acidity. It will be long lasting.
