
Olcaviana was born nestled in a family-run viticulture company dating from several generations back, represented in the 20th century in the figure of Tomás Ruiz, viticulturist hardened and experienced in the tasks involving vine growing and proprietor of a family-run winery with capacity for 200,000 liters. The tradition of cultivation is based on low-bearing stocks, with yield based on the climatology of an area that is ideal for grape growing, with calcareous, clayey soil and aMediterranean continental climate, in which winters are harsh and summers are hot.
Currently the winery is run by his heirs, who by planting a series of new varieties have decided to write another page in the history of this experienced winery. In the year 1994 they started with trellis trained Cabernet Sauvignon, currently also cultivating Syrah, Tempranillo, Petit Verdot, Merlot, Chardonnay, Viognier, small-grained Muscatel and Gewürztraminer. As an example of their decisive wager on innovation, they are experimenting with the result of the Albariño and Vermentino varieties in this area. The wines that have been obtained during these first few years of their journey correspond to two types: young wines, with the characteristics of the grape varieties they use or aged Crianza wines, in which they try to insure that the characteristics of the variety are maintained in complementary fashion with the characteristics of the oak casks.
The winery is located at the extreme eastern end of La Mancha, close to La Roda, along the road that leads to Santa Marta, traditional vine-growing area since Roman times. Surrounded by their own vineyards, the new construction was undertaken in the same Manchego style of the area, likewise fitted out withmodern stainless steelmachinery and equipment, thus combining this region’s viniculture tradition with new technologies. Now they are taking another step forward with a series of facilities aimed at tourist activities related with the world ofwine, the samewith the aimof promoting and supporting the region’s viniculture heritage.
