
It is exactly on the same plain where Don Quixote de la Mancha lived his adventures that the Montalvo Wilmot family creates their wines based on centuries-old traditions, likewise producing wines in one of the best Bordeaux areas. Los Cerrillos Estate, which is the name of the complex where their winery stands, occupies lands of what used to be the Grand Priory of the Order of Saint John of Jerusalem, better known as the Order of Malta. At this estate each and every vinestock of Tempranillo, Cabernet Sauvignon and Syrah is pampered, thus reaching their maximum expression in highly calcareous lime soils, which combined with the important temperature changes, low rainfall and many hours of sunshine result in ideal wines for the most demanding of palates.
Alejandro Montalvo, one of the members of the family saga, highlights that the young, “yet experienced winery, pursues innovation in the viniculture sector, in which quality is our main objective, perfectly combining tradition with technology. Thus our effort and regularity is reflected, which is not only heralded by the specialized reviewers and renowned wine tasters, but also by the extensive list of triumphs obtained in numerous and prestigious competitions”.
Amongst these wines the Gran Baco de Oro, Montalvo Wilmot Cabernet and the twice Gold Medal winner of the Best Wine of Tierra de Castilla (the Land of Castlle), the Montalvo Wilmot Roble and Syrah are worthy of mention. The winery counts with stainless steel vats and continuous temperature control for grape fermentation. The wine is then aged in French and American oak barrels and bottled on the property itself. All these operations are computer controlled, ranging from the state of the vines, right through to the perfect degree of humidity and temperature in all the facilities.
The estate’smore than 300 hectares of surface not only includes the vineyards, but also a Rural House with eight rooms and three suites, apart from a dairy, which is supplied with the product resulting from their own herds of cattle that graze on their lands. For the guest this estate represents a true immersion in the rural world, enjoying the possibility of observing the entire wine elaboration process, as well as the sheep-milk cheese production process that has made this Spanish region famous throughout the world.
